Cook time: 15 minutes
Servings: 4
Ingredients

- 1 cup cooked quinoa
- 2 cups of water
- 1/2 cup pumpkin seeds
- 2 green apples chopped
- 1 cup of celery
- 3 tbsp avocado oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Preparation
Cook your quinoa:
- Rinse your quinoa by running it under cold water for 30 seconds. It is recommended to do this in a colander.
- Put your one cup of uncooked quinoa in a pot with 2 cups of water (When doubling, stick to the 1:2 ratio).
- Bring this to a boil and then reduce to a simmer for 10-15 minutes (or when all the water is absorbed).
- Remove the pot from the heat and cover. Allow it to steam for 5 minutes while you prepare the rest of your salad.
Optional: If desired, you can stir a drizzle of olive oil and some freshly grated garlic into your quinoa before adding to the salad. This adds more flavor to your quinoa and the salad as a whole.
Prep your salad and dressing:
- Rinse your arugula, apples, and celery.
- First, place your arugula in a large bowl.
- Next, chop your apples and celery into bite-sized pieces. Add them to the bowl.
- Finally, add your pumpkin seeds to the bowl.
- In a small bowl, mix the avocado oil and lemon juice to create your dressing.
Assemble:
- Add your cooked quinoa and dressing to the large bowl.
