This dish is one of my go-to dishes for breakfast on the weekend. I love the soft, running yolk that pops when you break into the egg. The green, creamy avocado sauce. The toasted English muffin with tomato.

Everything about this dish is sensational.

Can we back up and talk about the avocado sauce again for a second? This is one of the greatest inventions in culinary history, in my opinion. It’s like guacamole, but better. The cream, the avocado, the thyme, and the mustard all come together to make a sumptuous sauce that will have your taste buds swooning in pure delight.

Honestly, if I could, I would love to eat this for breakfast, lunch, and dinner.

It is that good.

It gives you the needed protein to start your day, is super light, and you don’t feel heavy. It has beautiful flavors and is great comfort food.

How to Make an Eggs Benny Twist With Avocado & Tomato

Preparation: 10 minutes

Cook time: 15 minutes

Servings: 2 people

Ingredients

  • 1 cup 15% cream
  • 1 sprig of fresh thyme
  • 1 tsp Dijon mustard
  • 1 avocado, ripe and peeled.
  • 1 tomato cut into slices.
  • ½ cup kale (crunch it a little bit with your hands to make it smoother).
  • Freshly ground salt and pepper
  • 4 cups of water
  • 2 tbsp white vinegar
  • 2 eggs
  • 2 tbsp unsalted butter
  • 2 pieces of toasted English muffins (or your bread of choice!).

Preparation & Cooking

Step 1

In a saucepan, add cream, thyme, and mustard—season with some salt and pepper. Bring to a boil and reduce the heat to low, and let it simmer for 10 minutes.

Step 2

Once the 10 minutes have passed, add the avocado, remove the thyme, and grind everything with a hand mixer.

Step 3

In another saucepan, bring your 4 cups of water to a boil and add 1 tsp of salt and 2 tbsp of white vinegar. The vinegar will ensure your eggs keep a compact shape as you poach them.

Step 4

Once the water boils, reduce heat and wait until the water is down to a simmer. Make a swirling motion with a spoon and add in one egg at a time.

Step 5

Cook the eggs for 2-4 minutes over simmering heat. Once your eggs are poached, remove them from the water and place them on absorbent paper.

Step 6

Toast the pieces of English muffins (or whichever bread you have picked), place one of them on a plate, and spread your butter. Then, add the kale, a poached egg, tomato slices, and top with the yummy avocado sauce from your first saucepan.
