How to Make an Eggs Benny Twist With Avocado & Tomato
Preparation: 10 minutes
Cook time: 15 minutes

Ingredients
- 1 cup 15% cream
- 1 sprig of fresh thyme
- 1 tsp Dijon mustard
- 1 avocado, ripe and peeled.
- 1 tomato cut into slices.
- ½ cup kale (crunch it a little bit with your hands to make it smoother).
- Freshly ground salt and pepper
- 4 cups of water
- 2 tbsp white vinegar
- 2 eggs
- 2 tbsp unsalted butter
- 2 pieces of toasted English muffins (or your bread of choice!).
Preparation & Cooking
Step 1
In a saucepan, add cream, thyme, and mustard—season with some salt and pepper. Bring to a boil and reduce the heat to low, and let it simmer for 10 minutes.
Step 2
Once the 10 minutes have passed, add the avocado, remove the thyme, and grind everything with a hand mixer.

Step 3
In another saucepan, bring your 4 cups of water to a boil and add 1 tsp of salt and 2 tbsp of white vinegar. The vinegar will ensure your eggs keep a compact shape as you poach them.

Once the water boils, reduce heat and wait until the water is down to a simmer. Make a swirling motion with a spoon and add in one egg at a time.
Step 5
Cook the eggs for 2-4 minutes over simmering heat. Once your eggs are poached, remove them from the water and place them on absorbent paper.
