How to Make Vegan Mac & Cheese

You might be wondering: Vegan? Why vegan mac and cheese?

The truth is, once you have tried this mac and cheese dish, you won’t want any other!

Our vegan mac and cheese is made from zero animal products and is truly delicious. Many people refer to vegan diets as an extreme version of vegetarianism. But, once you have tried some of this pasta, you’ll be sure to find that it tastes just as good as your regular mac and cheese. And vegan diets actually come with a few benefits as well:

  • Vegan diets can be richer in certain nutrients.
  • It appears to lower blood sugar levels.
  • It is linked to a lower risk of heart disease.

Of course, you do not have to go on a full-blown vegan diet!

This mac and cheese may seem scary with the label as “vegan,” but trust me when I say it is divine, and you cannot tell the difference if you tried. Plus, it’s always fun to try new things, right?

How to Make Vegan Mac & Cheese

Preparation time: 15 minutes

Cook time: 30 minutes

Servings: 4 people

  • 1 cup of cashew nuts
  • 2 cups diced butternut squash
  • 2 cups of plant-based milk
  • 5 tbsp nutritional yeast (this is mainly used in vegan dishes as a protein source! It is high in B-12).
  • 1 tbsp of lemon juice
  • 3 tbsp virgin coconut oil
  • 2 cloves garlic
  • 1 tsp sea salt
  • 1 onion
  • 1/4 tsp sweet paprika tea
  • 2 tbsp tomato paste
  • Freshly ground pepper to taste.
  • 6 cups of cooked pasta of your choice (When choosing your pasta, make sure you’re opting for the vegan version and avoid buying fresh pasta or avoid pasta that contains eggs).

Preparation & Cooking Instructions

Step 1

Soak the cashews in a bowl of hot water for 30 minutes. Rinse and drain. Once you have soaked the cashew nuts in hot water, they become softened and taste deliciously creamy!

Step 2

Combine all ingredients (except the pasta!) in a blender on high speed until smooth and creamy. The cashew nuts and nutritional yeast are the star ingredients for the cheesy sauce. Adjust the seasoning to taste.

Step 3

Cook the pasta in boiling salted water as directed on the package.

Step 4

While your pasta cooks, pour the sauce into a large saucepan to heat over medium heat.

Step 5

Once the pasta is cooked and drained, put it in the saucepan with the cheese sauce and mix well.

I am in love with the texture of this cheesy sauce! It has a velvety, smooth consistency like no other. Top this dish off with some extra cheese if you wish, or any other ingredients you love.
