How to Make Cranberry Balsamic Roasted Chicken

Are you in need of a delicious last-minute dish for Christmas? Are you just plain sick of turkey and all of the time it takes to get a big meal together? Then you absolutely must try this juicy roasted chicken with cranberries recipe.

Whether it may be a dinner shared with friends, family, loved ones, or even by yourself, this recipe only calls for less than an hour and a half of your time, and with only eight super simple steps, you’ll fly through preparing this dish with almost no effort needed.

This dish has been one of many staples in my home, and it’s really a perfect meal for any time of the year. The chicken is super tender, juicy, and has a nice crispy skin. The whole cranberries give a nice pop of fruity flavor.

The best part is you can adjust this recipe as needed (if you’re not a fan of cranberries) and add sides such as rice, Hasselback potatoes, or mashed sweet potatoes to really tie it all together.

How to Make Cranberry Balsamic Roasted Chicken

Preparation time: 15 minutes

Cook time: 1 hour

Servings: 12 people

Ingredients

  • ¼ cup of balsamic vinegar
  • ¼ cup maple syrup
  • 1 tsp dry rosemary
  • 8 chicken thighs, with the skin on
  • 1 cup of cranberries
  • Pepper and salt

Preparation & Cooking

Step 1

Preheat the oven to 400°F and place one of your oven racks right in the center of your oven.

Step 2

In a large cooking dish, combine the vinegar, maple syrup, and rosemary.

Step 3

Add the chicken to this mixture and toss to coat well. Divide the cranberries over the chicken.

Step 4

Pepper generously and add a pinch of salt.

Step 5

Bake for 55 minutes.

Step 6

Using a kitchen brush, brush the chicken with the cooking juices formed in your cooking dish.

Step 7

Continue cooking for 1 to 2 minutes under the broiler or until the chicken’s skin is golden brown.

Step 8

Serve with rice, vegetables, and/or potatoes if desired.
