This “trick-or-treat” inspired dessert is perfect for all ages, and it’s also very healthy for you, which is perfect for lightening up those Halloween candy bags.

The best part?

If you’re thinking about carving Jack-O’-Lanterns this year, you can actually utilize the pumpkin pulp instead of throwing it away. Fresh pumpkin puree (which is an ingredient in this recipe) can be made with the pulp of the pumpkins, and it serves as a way to reduce your food waste as well.

Pumpkin Oatmeal Halloween Cookie Recipe

Cook Time: 20 minutes

Preparation Time: 15 minutes

Servings: 12 people

Ingredients

  • ⅓ cup butter
  • 1 cup pumpkin puree
  • 2/3 cup brown sugar
  • 1 egg
  • 2 cups of oatmeal
  • ½ cup flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg

Preparation

Step 1

Preheat your oven to 350° F and line a baking sheet with parchment paper.

Step 2

Melt your butter.

In a large bowl, mix together the pumpkin puree, brown sugar, egg, and butter with a fork.

Step 4

Add the oats, flour, cinnamon, and nutmeg to the large bowl. Mix well.

Using an ice cream scoop, form 12 balls of cookie dough, and place them on the baking sheet. Flatten each one slightly with a fork.

Step 6

Bake for 15 minutes or until golden brown. Let them cool down once removed from the oven for a few minutes, and then serve!

These cookies can be stored for up to 1 week in your refrigerator, or 1 month in your freezer in an airtight container.
