How to Make 3 Different Types of Mouthwatering Meatballs

Okay, serious question: who doesn’t like meatballs?

Meatballs are extremely versatile, and you can prepare them in a multitude of different ways, with a variety of different sauces!

Today I have three unique meatballs recipes for you:

  • A meatball recipe made with ground chicken tossed with a smooth Swedish sauce.
  • Korean-style beef meatballs accompanied by an irresistible sweet and salty sauce.
  • Indian-style vegan meatballs made with Beyond Meat served with coconut milk and curry sauce (I salivate just thinking about it).

Tips For Creating the Perfect Meatball

It is essential that you properly measure the dry and wet ingredients, and before shaping your meatballs, let your mixture first cool in the fridge.

When baking your meatballs, ensure that you are using a baking sheet lined with parchment paper. This will keep your meatballs round and allow them to achieve a golden, even cook.

How to Make Swedish Chicken Meatballs

Preparation: 30 minutes

Cook time: 20 minutes

Servings: 36 meatballs

Ingredients

  • 1 cup Panko breadcrumbs
  • 1 1/2 tsp salt
  • 1/2 cup lukewarm milk
  • 1/4 cup butter
  • 1 cup finely chopped onions
  • 2 eggs, beaten
  • 790 g ground chicken
  • 3 tbsp flour
  • 3 cups chicken broth
  • 1/2 cup 35% cream
  • 2 tbsp Dijon mustard
  • Freshly ground pepper

Preparation

Step 1

Line a baking sheet with parchment paper, and leave it over to the side.

Step 2

In a large bowl, combine the breadcrumbs with 1/4 teaspoon of salt and the lukewarm milk.

Step 3

In a skillet, cook the onions with 1 tbsp of butter over low heat for 10 minutes. Let cool and add to the breadcrumb mixture.

Add the beaten eggs, ground chicken, and 1 1/4 teaspoon of salt. Mix well without kneading too much.

Step 4

Form 1 1/2-inch meatballs using an ice cream scoop or two spoons. Refrigerate for 30 minutes on the baking sheet lined with parchment paper.

Step 5

Preheat your oven to 450°F.

Step 6

Melt the remaining butter over medium heat in a heavy-based saucepan. Add the flour and stir with a wooden spoon for 4 minutes or until the flour begins to brown.

Step 7

Add the broth to the saucepan mixture and mix well with a whisk. Bring to a boil and simmer for 10 minutes over low heat. Add the cream and mustard. Taste and season as needed. Leave this over to the side.

Step 8

Bake the meatballs for 10 minutes in the oven, rotating halfway through the cooking time. Add the meatballs to the sauce and simmer for 5 minutes over low heat.

Step 9

Serve on pasta with steamed vegetables!

How to Make Korean-Style Beef Meatballs

Preparation: 30 minutes

Cook time: 10 minutes

Servings: 24 meatballs

Ingredients

  • 3/4 cup Panko breadcrumbs
  • 1 1/2 tsp salt
  • 1/4 cup lukewarm milk
  • 1 egg, beaten
  • 450 g ground beef
  • 3 tbsp maple syrup
  • 3 tbsp hoisin sauce
  • 1/4 cup soy sauce
  • 3 tbsp rice vinegar
  • 1 tsp sriracha sauce

Preparation

Step 1

Line a baking sheet with parchment paper, and leave it over to the side.

Step 2

In a large bowl, combine the breadcrumbs with 1/4 teaspoon of salt and the lukewarm milk.

Step 3

Add in the beaten egg, ground beef, and 1 1/4 teaspoon of salt. Mix well without kneading too much.

Step 4

Form 1 1/2-inch meatballs using an ice cream scoop or two spoons. Refrigerate for 30 minutes on the baking sheet lined with parchment paper.

Step 5

Preheat your oven to 450°F.

Step 6

Bring the maple syrup with the hoisin sauce, soy sauce, rice vinegar, and, if desired, the sriracha to a boil in a skillet.

Step 7

Add the meatballs to the skillet and cover. Simmer for 5 to 8 minutes over low heat—cover and cook for 3 to 4 minutes.

Step 8

Serve with rice and steamed vegetables.

How to Make Beyond Meat Indian-Style Meatballs

Preparation: 20 minutes

Cook time: 15 minutes

Servings: 14 meatballs

Ingredients

  • 1 package of ground Beyond Meat
  • 1 tsp garam masala, ground
  • 1 shallot, finely chopped
  • 1 tsp ginger, chopped
  • 1 garlic cloves, finely chopped
  • 1 tbsp ginger, chopped
  • 1 tsp sriracha sauce
  • 1/2 cup coconut milk
  • 1/2 cup vegetable broth
  • 1 tbsp powdered yellow curry

Preparation

Step 1

In a bowl, combine the Beyond Meat, garam masala, shallot, ginger, and garlic.

Step 2

Shape the mixture into balls the size of a golf ball.

Step 3

Place on a baking sheet and cook in the oven at 400°F for 20 minutes.

Step 4

Over medium heat in a hot pan, add ginger, hot sauce, coconut milk, curry, broth, and cook for 10 minutes. Check for taste, and add more seasoning if you would like.

Step 5

Add the cooked meatballs to your sauce, and enjoy!
