How to Make Savory & Sweet Homemade Pierogi
Did you know that pierogi are close cousins of ravioli? Cooked in boiling water and often browned in a pan, they are eaten in savory versions (stuffed with cheese, mashed potatoes, mushrooms, and more!) and sweet versions filled with dried apricots or blueberries.
Pierogi are one of the most popular Polish dishes.
While these pierogies are technically easy to make, they take quite some time! That being said, the results are well worth the wait. The best part is you can easily freeze them raw and continue to cook them when desired throughout the following months.
You can also add a splash of color to your plate.
Whether you choose colored potatoes (yes, that’s an option!), spices, or herbs, feel free to get really creative with whatever you decide to add on.

How to Make Savory & Sweet Homemade Pierogi
Preparation: 1 hour 30 minutes
Cook time: 15 minutes
Servings: 60 pierogi (30 sweet & 30 savory)
Ingredients
Savory Filling
- 4 potatoes, peeled
- 300 grams cream cheese, cold
- 2 tbsp of vegetable oil
- 1/2 cup mushrooms
- 1 small onion
- 1/2 cup sour cream
- Salt & pepper
Sweet Filling
- 1 cup of blueberries
- 2 tbsp sugar
Dough
- 8 cups of all-purpose flour
- 2 eggs
- 2 cups of hot water
- 3/4 cup melted butter
- Salt, for cooking

Instructions: Savory Pierogi Filling
Step 1
Cook the potatoes in boiling water until tender, about 15 minutes. Drain. Finely chop into very small pieces. Use a pastry cutter if necessary.

Cut cream cheese into small pieces.
Step 3
Heat the oil in a pan and brown the mushrooms and onions until tender, about 15 minutes.
Step 4
In a large bowl, combine the chopped potatoes, cheese, mushroom-onion mixture, sour cream, salt, and pepper. Mix everything well and set it aside. (to serve once cooked, you can garnish with basil and sour cream!).
Instructions: Sweet Pierogi Filling
Step 1
In a bowl, mix the blueberries with the sugar. Ensure that when filling the dough, each pierogi has 3-4 blueberries inside.
Instructions: Pierogi Dough & Cooking
Step 1
Place the flour on a clean surface and make a well in the center. Add the eggs in the center, the butter, and a small amount of hot water. Mix with your hands, adding the rest of the hot water as you go.
Mix and knead the dough, adding a little more flour to the work surface as needed so that the dough does not stick. The dough should be soft and smooth.
Step 2
Work a quarter of the dough at a time and roll it out to a thickness of 3 mm. Use a glass or cookie cutter to cut round dough shapes.
Step 3
Place a teaspoon of the filling on each round of dough and fold them into half-moons over the filling. Seal the edges of the dough by pinching them. Repeat with the rest of the dough.
Step 4
Bring 3 liters of salted water to a boil and immerse 10 pierogies simultaneously; cook until they come to the surface, about 10-15 minutes. Repeat with the rest of the pierogies.
