Breakfast: Delicious Pineapple Muffins

This unusual treat is beyond yummy and is a perfect breakfast or mid-day snack. These muffins have a fresh, exotic flavor that will help you to start your day right. They are nutritious and will give us the energy we need for the day ahead.

Pineapple Muffins.

Prep time: 15 minutes

Cook time: 30 minutes

Servings: 12 muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup wheat flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 can (398 mL) crushed pineapple
  • 1 egg, beaten
  • 3/4 cup milk
  • 1/4 cup butter, melted

Pineapple muffins.

Preparation

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine both flours, sugar, baking powder, and salt.
  3. Drain pineapple, reserving 1/4 cup of the juice.
  4. Add the pineapples, the juice (1/4 cup), egg, milk, and melted butter. Mix just enough to combine.
  5. Line a muffin pan with muffin liners and pour your mixture into the muffin tins.
  6. Bake for 30 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  7. Let cool and serve. Enjoy!

Lunch: Fennel, Apple, & Chickpea Salad

For lunch, let’s make a delicious salad of fennel, chickpeas, and apples. Crisp and full of freshness, this salad can be prepared quickly and can be stored for 1 to 2 days in the fridge.

Fennel and Chickpea salad.

Prep time: 30 minutes

Servings: 4 people

Ingredients

  • 1/4 cup thick plain yogurt
  • 1 tbsp maple syrup
  • 2 tsp lemon juice
  • 1 tsp Dijon mustard
  • 1 pinch salt
  • 2 cups fennel, thinly sliced ​​
  • 1/2 cup ​​celery, thinly sliced
  • 2 red apple, peeled and chopped
  • 3/4 cup chickpeas, rinsed and drained
  • Fresh basil if desired

Fennel and chickpea salad.

Preparation

  1. In a bowl, whisk together your dressing by combing the yogurt, maple syrup, lemon juice, Dijon mustard, and salt until smooth.
  2. In a large bowl, add the fennel, celery, chickpeas, and apple and mix.
  3. Once you are ready to serve, pour the dressing and toss the ingredients together.
  4. Top with fresh basil if desired and enjoy.

Dinner: Chickpea Curry

Let’s make some chakra comfort food: A tasty and comforting Chickpea Curry. You can serve this chickpea curry with couscous, quinoa, or rice.

Cook time: 22 minutes

Servings: 3 people

Ingredients

  • 1 tbsp coconut oil
  • 1 medium onion, thinly sliced
  • 1 tbsp minced fresh ginger
  • 1 tbsp garlic, finely chopped
  • 2 tsp curry powder
  • 1/4 tsp crushed red pepper
  • 1/2 cup diced tomatoes
  • 2 tsp low sodium soy sauce
  • 2 tsp maple syrup
  • 2 tsp tomato paste
  • 1 can (540 ml) chickpeas, drained
  • 1 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 1 tsp sriracha sauce (optional)
  • Cooked couscous, rice, or quinoa to serve

Preparation

  1. Melt the coconut oil in a large saucepan over medium heat; add the onion and cook until brown (for 5-7 minutes).
  2. Add ginger and garlic to the pan and cook for 30 seconds.
  3. Add the curry powder, crushed red pepper, broth, soy sauce, maple syrup, and tomato paste; mix.
  4. Stir in chickpeas; cover, bring to a boil, immediately reduce heat and simmer for about 10 minutes until tender, half-covered.
  5. Then add milk and cilantro; mix. Simmer for 5 minutes.
  6. Remove from heat and add salt, pepper, and sriracha, if necessary.
  7. Serve over rice, couscous, or quinoa and enjoy.
