Feed Your Body Friday: Loaded Breakfast Burritos

I’m always tempted to start the day with a heavy breakfast. By heavy, I mean a power-packed breakfast loaded with proteins and healthy ingredients to see me through the whole day. Most of us remember being threatened first thing in the morning with a “don’t you dare skip breakfast” by our mothers! If you’re anything like me when I was young, I always woke up at the last minute and had to rush to school after a bowl of sugary cereal or worse, on an empty stomach. These days, most people with an 8-10 hour work shift end up snacking at random hours rather than taking proper meal breaks. Therefore, I came up with the perfect morning solution to suit the just-woke-up palate, these healthy Breakfast Burritos that are ready in just 20 minutes.

Let’s find out the health benefits of having a freshly made delicious breakfast burrito. Eggs give us our daily dose of protein. Incredibly nutritious and very filling, eggs are literally the perfect comfort food. Bell peppers are a good source of Vitamin C, aid in maintaining eye health, and contain amazing anti-oxidant properties. The need for iron and calcium is covered by the spinach. Finally, salsa brings a flavourful punch to the burrito rather than using regular bottled ketchup; plus, it comes in so many flavours so you can personalize your burritos.

Preparation Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yields: 2 burritos

Ingredients:

  • 4 eggs
  • 2 tortillas (I prefer whole wheat)
  • 1 red pepper
  • 1 cup spinach
  • 3 tbsp. onion, finely chopped
  • 1 tsp. fresh parsley
  • 4 slices cheddar cheese
  • Salsa to taste

Preparation:

  1. In a skillet, heat the oil and sauté the vegetables.
  2. When they are tender, lower the heat to a minimum and add the eggs. Stir constantly.
  3. When the eggs are cooked, add the salsa and the spinach. Continue cooking for 3 minutes, then remove from heat.
  4. On a microwave-safe plate, place the tortillas and cover them. Warm for 30 seconds at maximum power.
  5. Place the cheese in the tortillas, cover with the egg mixture, and add the parsley. Roll and serve.

These breakfast burritos check so many boxes. Fresh veggies? Check. Protein? Check. Full belly? BIG check. Go right ahead and add in any other fresh veggies you have on hand if you’re extra hungry. You can also sprinkle in some bacon bits or slices of ham if you’re a meat-lover.

You can even prepare a bunch of these breakfast burritos in advance and freeze them, just remove from the freezer the night before and warm them up in the morning. When I am running late, I simply grab a breakfast burrito to eat on my way out the door. Sometimes, I pack an extra for lunch too.
