As the winter season sneaks in, I like to incorporate an abundance of warm comfort dishes into my daily diet. A great way to do this is opting for various types of nutritious soups, like today’s recipe for Cream of Broccoli Soup!

Ingredients:
- 1 cup water
- 1 cup broccoli with stems and florets
- 2 potatoes cut into pieces
- 2 tbsp. butter
- 1 onion, chopped
- 1 garlic clove, finely chopped
- 2 cups chicken broth
- 1 tsp. celery salt
- 1 tsp. oregano
- 1 tsp. parsley
- 1/2 tsp. paprika
- 1/2 cup cream
- Salt & pepper
Preparation:
- In a saucepan, bring the water to a boil. Add broccoli and potatoes. Reduce heat and simmer for 10 minutes.
- Melt butter in another saucepan and sauté onions and garlic for 1 minute over medium heat. Add broccoli and potatoes along with water and chicken broth.
- In a blender, blend the soup until smooth and even.
- Transfer to the saucepan. Then, add celery, salt, spices, and salt and pepper.
- Add cream, mix well, and serve.
For those who prefer broccoli chunks in their soup, you can use a potato masher instead of a blender/hand mixer.
