Feed Your Body Friday: Fruity Breakfast Pizza

If you thought pizza wasn’t a breakfast food, you thought wrong, Feed Your Body Friday friends!

A feast for the eyes and the tastebuds, this colourful, fruity pizza is easy to make, and the base, halfway between French toast and bread pudding, has all the assets to charm everyone. For the perfect serving throw on your favorite fresh fruits or lay them out in a floral pattern for a beautiful presentation.

I’m always looking for simple and healthy breakfast ideas when I have friends over, or just when I want to make something original. The breakfast pizza is, in my opinion, a great choice because we can integrate lots of good fruits. The traditional pizza is cooked with the dough, but for this breakfast pizza, I opted for a dough made with croissants.

I also love adding eggs and almond milk to the crust, because they are naturally super nutritious and give a nice texture to the pizza.

This breakfast pizza is an especially yummy treat in the summer when fresh fruit is easily available from your own garden or at the fruit stand at your local farmer’s market.

Preparation Time: 15 minutes

Cook Time: 40 minutes

Serves: 4-6 portions

Ingredients

  • 3 eggs
  • 3/4 cup almond milk
  • 1/2 cup maple syrup
  • 2-3 drops vanilla essence
  • 5 croissants (for a healthier alternative, use 10 slices of whole wheat bread)
  • 2 tablespoons softened butter
  • 5 strawberries, sliced
  • 1 kiwis, sliced
  • 1 peach, sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries

Preparation

  • Preheat the oven to 350°F
  • In a bowl, whisk the eggs with the milk, maple syrup, and vanilla.
  • Cut the croissants into small pieces and add to the egg mixture. Let soak completely.
  • Butter a round pie pan, and pour the mixture into the mold. Using the back of a spoon, press on the mixture.
  • Bake 30 to 40 minutes, or until the bread is firm to the touch. Let cool on a rack.
  • When garnishing, start by spreading the strawberries around the edge of the pizza. Work your way to the centre with the blueberries and the raspberries next, then the slices of kiwi fruit, and in the centre, the peach slices.
  • Serve with maple syrup, if desired.

The Breakfast pizza can be sliced like a regular pizza or cut in smaller squares for serving.

You can add any and all of the fruits that you love! Personally, I chose strawberries, kiwis, blueberries, raspberries, and peaches, but you could also add mangos, bananas, pears, grapes, or cherries. If you’re serving a group, you can put out a selection of fruits so everyone can customize their own! Just go with the fruits you love the most or the ones that you have on hand.

Who says you have to wait until dinner time to enjoy a pizza? Certainly not us!
