How to Make Caprese Tortillas
By now, you have probably seen the viral videos completely life-hacking the unassuming tortilla. It turns out that you can add four separate ingredients to each quadrant of a tortilla, fold it together into a perfect handheld pocket, and grill the whole thing to perfection.
You now have the perfect bite, every bite!
These Caprese tortillas use that same concept to create a wonderful Italian-inspired quesadilla. Caprese is a traditional Italian salad named for the island of Capri. It’s made of mozzarella, tomatoes, and basil, and it’s meant to represent the Italian flag’s colors of green, white, and red.
The secret ingredient here is the pesto, which kicks up the flavor with a garlicky zing.
Fresh pesto tastes best, and it’s worthwhile making it homemade if you can. It’s an easy sauce that can be made in a food processor with fresh basil, pine nuts, and very high-quality olive oil; however, you can find it jarred in the supermarket as well.
You can toast your handheld tortilla in a skillet or set it into a panini press or indoor grill. These will get crunchy without the use of oil, but you can spray a little cooking spray in your skillet if you want your tortilla extra crispy.
You’ll know these yummy tortillas are done when the cheese is gooey and melted, and the tortilla is golden crisp. Cut in half, and serve. If you want to get really fancy, add a drizzle of balsamic glaze….let’s get into the recipe!
How to Make Caprese Tortillas

Cook time: 5 minutes
Servings: 2 people
Ingredients
- 1 large tomato in slices
- 4 tbsp pesto
- 1/3 cup fresh basil
- 1/2 cup arugula
- 1/2 fresh mozzarella ball in slices
- 2 large tortillas
Preparation & Cooking
Step 1
Place the tortilla on a cutting board. Take a knife and cut a line from the center of the tortilla to the bottom edge.
Step 2
Add your ingredients starting with the left lower quarter – spread pesto and add fresh basil.
Step 3
In the upper left quarter, add the tomato slices.

On the upper right quarter, add the arugula.
Step 5
Finally, in the last quarter of your tortilla, add the cheese.
Step 6
Starting with the lower-left corner, fold the tortilla edge over the upper left corner.
Step 7
Then fold it up at the top right. Finally, fold it to the bottom right.
Step 8
Toast in a skillet over medium heat until the tortilla is crisp and the cheese melts, turning once, about 3-4 minutes per side.
