How to Make Winter Root Vegetable Soup

Ingredients
- 2 carrots, peeled and diced.
- 1 onion, finely chopped.
- 1 medium sweet potato
- 1 cup parsnip peeled and diced.
- 1 cup celery root peeled and diced.
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 bay leaf
- 6 cups of vegetable broth
- 2 cups of plain 2% yogurt
Preparation
Step 1
In a saucepan, combine the carrots, onion, sweet potato, parsnip, celery root, salt, pepper, bay leaf, and broth.

Bring your saucepan to a boil over high heat. Cover, reduce heat to medium-low, and gently boil for 20 minutes, or until the vegetables are tender.

Discard the bay leaf.

Step 5
