Feed Your Body Friday: Watermelon Salsa
Watermelon is the quintessential summer fruit. Just looking at one makes you feel all warm and tropical! Truly, what other fruits are quite as refreshing in the summer heat than watermelon?
The only downside is that, given its size, sometimes there’s just too much watermelon to eat before it goes bad. Refreshing and easy to prepare, whipping up a batch of this watermelon salsa means you’ll never waste watermelon again! Every year, as soon as I spot a good watermelon at the grocery store or farmer’s market, I rush home to make this recipe. It only takes a few minutes to make and it’s incredibly refreshing. Try it once and you will see that you will probably want to make it for the rest of watermelon season!
This watermelon salsa is the perfect combination of sweet and salty, including jalapenos, basil, cucumber, onion, and honey.
Nothing is more refreshing than noshing on a fruit made of 92% water! Water plays a vital role in regulating body temperature, transporting nutrients and oxygen to cells, eliminating waste and protecting joints, organs and tissues. Watermelon is also a good source of:

Watermelon Salsa

Servings: 4-6
Ingredients:
- 2 cups watermelon
- 1/2 cup cucumber, finely cut, peeled and seeded
- 1/4 cup red onion, finely chopped
- 1/2 seeded jalapeno pepper, finely diced
- 1/4 cup fresh basil, finely chopped
- 2 tbsp. honey
- 2 tsp. fresh lime juice
- Corn chips
Preparation:
- Chop the watermelon into small, bite-sized cubes.
- In a large bowl, combine watermelon, cucumber, onion, peppers, and basil.
- Add honey and lime juice; mix well to combine everything.
- Refrigerate for at least 30 minutes.
- Serve with corn chips and enjoy!
