  • 1 tsp. vanilla
  • Chocolate (grated)
  • Coconut flakes

Preparation:

  1. Melt the chocolate in a bain-marie. When the chocolate is melted, remove from heat and allow it to cool slightly, stirring occasionally to prevent hardening.
  2. Add tofu and vanilla. Whisk vigorously until the texture is smooth and even.
  3. Spread evenly into 6 small bowls and refrigerate for at least one hour before eating.

A close vegan alternative to the dessert tofu in this recipe is vegan Greek yogurt made with almond milk or coconut milk. If you don’t love coconut flakes as a topping, this vegan chocolate mousse also tastes fantastic garnished with fresh berries such as raspberries, strawberries, or blackberries. Crushed nuts would add an interesting texture to the soft mousse as well.
