Feed Your Body Friday: Strawberry Basil Popsicles

Are you getting into the swing of summer, Feed Your Body Friday friends? I know I am!

Seriously, is there anything better than a popsicle on a hot summer day? I don’t think so! This simple recipe was so delicious that I ate five in a day!

You will discover that there is nothing easier than making your own homemade popsicles. Plus, you’ll get to cut out all of the processed sugars packed in storebought popsicles. So go ahead, eat as many as you like.

If you haven’t already done so, I urge you to equip yourself (before the end of the summer!) with a reusable popsicle mold, a good investment that you will not regret! There are really a thousand and one combinations to try, from the most classic flavours to the most original and unique experiments. When you make them homemade, you can really have fun with the flavors and textures, and you can make a ton of different kinds with very little effort. What better way to cool off on a hot summer day?

For these popsicles, I used strawberry and basil, which is a combination that goes so well together. It’s a refreshing, totally green and vegan popsicle! Instead of sugar, I used agave syrup for sweetener. The flavour of the coconut milk also adds a little extra sweetness and makes this recipe friendly for anyone with dairy sensitivities. No reason to restrict yourself, you can eat as many as you want without any guilt!

Serves: 10-12 Popsicles

Ingredients:

  • 2 cups fresh or frozen strawberries
  • 1 can of coconut milk
  • 2 tbsp. agave syrup
  • ¼ cup fresh basil leaves

Preparation:

  • Wash and dry strawberries if they are fresh. Cut the strawberries into slices and reserve a few slices to add to the popsicle mold.
  • In the blender, add the coconut milk, the strawberries, and the agave syrup. Add the basil leaves and mix.
  • Pour mixture into the molds, slip a few slices of strawberry into each mold and place in the freezer 4 hours minimum before tasting.

You will see, it’s really awesome to make homemade popsicles as it allows you to add plenty of whatever fruit you like best, and avoid excessive amounts of sugar. In addition, making homemade frozen desserts is much more economical. So don’t hesitate to spoil yourself with this frozen sweetness. They are hyper-easy to do and the whole family will love them.

This recipe can also make a smoothie, the only thing you have to do differently is to pour the blended mixture in a large glass and don’t put in in the freezer, just enjoy it right away!
