How to Make Mini Berry Muffins
While cleaning my kitchen a few weeks ago, I realized that my muffin pans haven’t seen any use in quite some time. For lots of people, muffin pans are probably not the kitchen accessory you use the most. So today, I’m sharing a quick recipe idea that’ll inspire you to reacquaint yourself with your muffin pans!
I especially like to use this recipe as an alternative to berry pancakes; they’re easier to prepare and will be healthier since they aren’t cooked in oil. In addition, they’re ready in 35 minutes, and you can serve them with extra fruit, maple syrup, eggs, or sausages. If you aren’t much of a breakfast person but still find yourself hungry in the morning, whip up these mini muffins and seal 2-3 into sandwich bags so you can take them with you to work or school.
This mini muffins recipe is great for apprentice bakers or lazy or reluctant cooks. You probably already have all the ingredients at home! It’s also very easy and quick since all you have to do is mix everything together before pouring into muffin pans.
Made from just three basic ingredients, flour, eggs, and milk, the muffins keep it simple, healthy, and nutritious. The main ingredient of the muffin batter is flour, whose complex carbohydrate content is a long-term source of energy. Rich in fiber, just a few of these mini muffins will satiate you quickly and for a long time. Last but not least, they are great little sources of calcium since we’re using regular milk in this recipe.
Mini Berry Muffins:
Preparation Time: 15 Minutes
Cook Time: 20 minutes
Servings: 12 Muffins
Ingredients:
- 1 cup flour
- 1 tbsp. sugar
- Salt
- 2 large eggs
- 1 1/2 cups milk
- 1/2 cup frozen fruits of your choice
- 2 tsp. vanilla essence
- 1 tbsp. butter, melted
Preparation:
- Preheat the oven to 350˚F
- In a bowl, combine the flour, sugar, and salt. Add the eggs and milk, then mix with a whisk.
- Add fruits, vanilla, and melted butter. Mix everything together.
- Butter the muffin pans and pour in the muffin batter.
- Bake at 350°F for 20 minutes until muffins are puffed and browned.
- Remove from the oven and drizzle with maple syrup if desired
With muffins, it’s practically impossible to get bored! We can create dozens and dozens of gourmet recipes by varying the fruits and ingredients we use! If you prefer savory recipes, you could always add ham or smoked salmon, and accompany them with a vegetable soup or a green salad. On the sweet side, opt for fruits, berries, dark chocolate chips, or the juice of a lemon or an orange for some extra vitamins.
