Feed Your Body Friday: Mediterranean Chicken Wrap

I know that many of you are often looking for new ways to cook chicken breasts. Lost in ideas of pasta, one dish meals and salads, we often forget that we can also eat sandwiches for supper! Besides being really good, sandwiches are also super simple to prepare!
During summer time it’s great to find recipes to prepare that won’t sit heavily in the stomach or are overly complicated. So sandwiches and salads are good options! Wraps can save our lives when we are in a hurry and want something lighter than a thick slice of bread!
For this recipe, I went with a tropical Mediterranean vibe by incorporating garlic and yogurt-marinated chicken.
Made from yogurt rather than mayonnaise, this marinade is much less oily while still adding a lot of tenderness to the chicken. If you’re afraid of the taste of yogurt being too overpowering, you don’t have to be. I can promise that you won’t taste the yogurt at all! Yogurt really only serves to tenderize the chicken, while the garlic is what gives it a lot of taste.
You can prepare this recipe on the barbecue or a stovetop. Just remember that the cooking times will vary, especially when it comes to chicken. There is, however, an easy way to know if the poultry is ready, which does not require cutting in your piece of meat. Using a food thermometer is the best way to know for sure if the chicken is cooked. When the thermometer reads 180°F (82°C), you’re in the safe zone.
With that, let’s get into the recipe.
Mediterranean Chicken Wrap
Serves: 4 wraps
Preparation Time: 10 minutes
Marinade Preparation Time: 30 minutes
Cook Time: 15 minutes
Ingredients:
- 6 tortillas
- 2 chicken breasts
- ½ cup plain yogurt
- 3 garlic cloves, finely chopped
- 1 tsp. dry dill
- Juice of a lemon
- Salt and pepper
- 1 red onion, sliced
- 1 tomato, sliced
- 1 cucumber, sliced
- 1 cup kale, finely chopped
Preparation:
- Prepare the yogurt marinade. In a bowl, mix the yogurt, the garlic and the lemon juice together.
- Add the chicken to the marinade and reserve for a minimum of 30 minutes.
- Cook the chicken on both sided in a skillet or on your barbecue until it’s completely cooked, about 7 minutes on each side.
- On the tortillas, place the chicken, tomatoes, onions, cucumbers, and salad.
- Fold the tortillas in half and roll up.
- You’re ready to serve and enjoy your wraps!
You will enjoy these tasty marinated chicken wraps with vegetables that will be ready in less than an hour. It’s really a perfect easy dinner recipe for you and your family if you like Mediterranean cuisine. If you like, I recommend serving with a Greek salad.
You can also prepare everything separately to allow everyone to get involved during the meal. All you have to do is prepare all the ingredients and arrange them on the table. This way everyone, can make their own unique wrap.
