Feed Your Body Friday: Bruschetta Chicken

Head to Italy in the comfort of your own kitchen with this bruschetta chicken recipe!

This Mediterranean dish is a concentration of sunny flavors, including tomatoes, parmesan, and basil. Bruschetta on bread is among the most popular starters in the world, and there’s a good reason for that - it’s so delicious! It’s difficult to find a more appealing mix of flavors than tomatoes filled with olive oil, basil, and Mediterranean seasonings. But today, we’re going to change it up a little: we’ll skip the carbs and instead of bread, we’ll use chicken to add protein and flavour.

This chicken bruschetta is not only delicious and full of flavor, it’s also quite easy to prepare - it takes just about 5 minutes of prep work. In the evening, when we come back from work, nobody wants to cook for hours, let alone 20 minutes most days. We want to eat well and we want to eat without delay. Even more, if the little ones are hungry, they don’t want to wait another minute. This express Italian dish can be easily adapted to the tastes of each of your family members (including yours).

Servings: 4


  • 4 chicken breasts
  • 1/2 cup shredded parmesan cheese
  • 3 seeded tomatoes, cut into small cubes
  • 1 tbsp. balsamic vinegar
  • 1 pinch sugar
  • 1 garlic clove, finely chopped
  • 3 tbsp. olive oil
  • Salt and pepper


  1. Season the chicken breasts. In a saucepan over medium heat, add 1 tbsp. olive oil and cook the chicken until no longer pink inside (about 6 to 10 minutes per side depending on the size).
  2. In a bowl, mix together the tomato, the balsamic vinegar, sugar, garlic and 2 tbsp. olive oil.
  3. Once the chicken is cooked, add parmesan on top of the chicken. Let it melt over the chicken for about 2 minutes
  4. Place the chicken on a plate, add bruschetta on top, and serve.

As you can see, I often like to serve this chicken bruschetta recipe on a bed of rice to make it extra filling and satisfying, but that step is completely optional.

It’s also important to note that, whether you use a nonstick skillet or not, whether you use fat or not, you really have to wait until the pan is HOT before adding the chicken! Otherwise, it may stick to the pan and burn. Moreover, the hotter the pan, the nicer the coloring and caramelization will turn out.
