Feed Your Body Friday: Almond Dark Chocolate Chip Cookies
Happy Friday everyone! It’s time for Feed Your Body Friday, and this week we are indulging!
By the end of the afternoon I’m always hungry. Especially if I’ve had both a healthy breakfast and lunch, my sweet tooth really starts to ache for a reward. This is where these almond and dark chocolate chip cookies come to the rescue as the perfect snack!
The mixture of the almond, dark chocolate, and oatmeal is a little sweet and overcomes any craving. Hearty oatmeal and almonds are satiating, nutritious, and boost your energy up to get you through the last few hours of your workday. This recipe is a healthier alternative to any chocolate chip cookies you can buy at the grocery store, and easily twice as delicious.

Yields: Approximately 20 Cookies
Ingredients:
- 1/2 cup applesauce
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1 egg
- 1 teaspoon essence of almond
- 1 1/2 cups oatmeal
- 1/2 cup all-purpose flour
- 1/2 cup wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 2/3 cup dark chocolate chips
- 1/3 cup chopped almonds
Preparation:
- Preheat oven to 375 °F.
- Mix coconut oil, maple syrup, egg, and almond essence with a blender.
- In another bowl, mix the dry ingredients together and stir in the wet mixture until smooth.
- Add the chocolate chips and almonds.
- Bake for 10 to 13 minutes until golden brown.
