Strudel is traditionally a layered pastry that comes from the German word for “whirlpool” due to the whirlpool look that the finished pastry has.

This Austro-Hungarian dessert is most commonly filled with apples. Still, it comes in many delicious varieties like poppyseed, coffee, pear, cherry, and cinnamon (some even create savory versions with meat, cheese, or cheese veggies in them).

Today we will be sticking with tradition by venturing out to the apple tree and picking a few apples for a new take on the strudel flavors.

For this recipe, we suggest picking one of the following apple types for your dessert:

Apple Strudel Muffin Recipe

Prep time: 20 minutes

Cook time: 25 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/2 cups chopped apples
  • 1/4 cup packed brown sugar
  • 1/8 tsp ground cinnamon
  • 1 tbsp butter

Preparation

Step 1

Preheat your oven to 375°F/190°C and grease a muffin pan (this recipe makes 12 muffins, so we recommend a standard 12 cup muffin tin).

Step 2

In a medium bowl, mix your dry ingredients: flour, baking powder, baking soda, and salt. Combine these.

In another bowl, beat together butter, sugar, and eggs until you obtain a smooth texture. Once smooth, add in your vanilla extract.

Step 3

Add the flour mixture to the wet mixture and mix at low speed to incorporate everything together. When everything is combined, mix in your the apples and stir.

Step 4

Next, we will be making our topping. In a small bowl, mix brown sugar, cinnamon, and butter until they form little crumbs in the bowl. Reserve this mixture until the next step.

Step 5

Place your muffin cups in the tin and, using a spoon, scoop your batter into each cup. Sprinkle a thin coating of your topping mixture on the tops of your muffins.

Once you are satisfied with the topping, place in the preheated oven and bake for 25 minutes until golden (or until a toothpick comes clean).

Step 6

Allow your muffins to cool for 5 minutes on a before removing from the tin. Place on a cooling rack until fully cool and store in an air-tight container.
