I absolutely love making this recipe, simply because it only takes half an hour to prepare and bake and requires most everyday ingredients you probably have already.

I also have fussy kids, but they can always be swayed with this healthy and yummy treat.

The chocolate chips play a large role when it comes to kids. Adding some vanilla can top off this recipe as well if you’re looking for a more “kid-friendly flavor.” They won’t even know that there’s zucchini in them!

How to Make Zucchini Oatmeal Chocolate Chip Cookies

Preparation: 20 minutes

Cook Time: 12 minutes

Step 1

Preheat the oven to 350°F.

Step 2

In a medium bowl, cream the butter with the sugar until you have a smooth, light texture.

Step 3

Add the egg and vanilla. Mix well, then add the zucchini.

Mix the flour, baking soda, and cinnamon in another bowl. Then, add to the zucchini mixture.

Step 5

Finally, stir in the oatmeal and chocolate chips.

Step 6

Place medium-sized spoonfuls of dough on a baking sheet. Leave 2” of space between cookies.

Step 7

Bake for 10-12 minutes in the oven or until golden brown.
