  • 1 large unpeeled sweet potato cut into 1/4-inch slices
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 green pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup frozen corn
  • 2 tsp tabasco sauce
  • 1 1/2 cup grated cheddar cheese
  • 1/3 cup tomato salsa
  • 1/4 cup fresh cilantro sprigs (optional)
  • Salt

Preparation

Step 1

In a large bowl, combine the sweet potato slices with olive oil, paprika, and garlic powder—salt for taste.

Spread the potato slices on a baking sheet lined with parchment paper. Bake in preheated 400°F oven for 20 minutes.

Step 4

Continue cooking in the oven for 8 minutes, then broil for 2 minutes.
