How to Make Nachos with Baked Sweet Potatoes

Cook time: 22 minutes
Servings: 4 people
- 1 large unpeeled sweet potato cut into 1/4-inch slices
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 green pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, cut in half
- 1/2 cup frozen corn
- 2 tsp tabasco sauce
- 1 1/2 cup grated cheddar cheese
- 1/3 cup tomato salsa
- 1/4 cup fresh cilantro sprigs (optional)
In a large bowl, combine the sweet potato slices with olive oil, paprika, and garlic powder—salt for taste.

Spread the potato slices on a baking sheet lined with parchment paper. Bake in preheated 400°F oven for 20 minutes.
Meanwhile, in a bowl, combine the bell pepper, red onion, cherry tomatoes, corn, and tabasco sauce.
Remove the sweet potato slices from the oven. Gather the sweet potato slices in the center of the baking sheet, then cover them with the vegetable mixture. Sprinkle with the cheddar cheese.
Continue cooking in the oven for 8 minutes, then broil for 2 minutes.
Garnish the nachos with tomato salsa and cilantro, if desired.
