Feed Your Body Friday: Yogurt & Fruit Salsa

It’s amazing what a simple combination of diced fresh fruits and some yogurt can create. Refreshing, colourful, and nutritious, this yogurt and fruit salsa will always be welcome for any occasion.

This recipe is as versatile as it is colourful, making for a great quick breakfast, an afternoon snack, or even a dessert. As we’re finally heading back into the warmer months, we can get excited about cooking with seasonal fruits; this yogurt and fruit salsa is the perfect way to play with all of your favourite fruits!

Move over, Skittles, because you’re about to taste the rainbow for real. From red strawberries or raspberries, orange mango or nectarines, yellow fresh pineapple, green kiwis or grapes, and violet blueberries or blackberries, you’ve got the whole rainbow in just one tasty little cup.

I always make this fruit salsa with unsweetened, organic Greek yogurt. Even if it is low in fat, Greek yogurt offers a rich and unctuous texture, ideal for healthy snacks or breakfast! However, you can feel free to use any kind of yogurt you like with this recipe. A coconut flavoured yogurt, for example, will bring out the shaved coconut garnish and sweeten the deal.

There’s a lot of room to play and be creative with this simple recipe, but here’s how I like to make my yogurt and fruit salsa:

Preparation Time: 20 minutes

Servings: 2-3 yogurt cups

Ingredients:

  • 1 1/2 cups vanilla Greek yogurt
  • 1/3 cup maple syrup
  • 6 strawberries
  • 1/2 cup pineapple
  • 2 kiwis
  • 1 orange
  • 2 tbsp. chopped mint (optional)
  • 1 tbsp. lemon zest (optional)
  • 1 tbsp. grated coconut (optional)

Preparation

  1. For the salsa, dice all fruit into small squares. Place in a bowl.
  2. Add mint and lemon zest.
  3. Spread the yogurt and fruit salsa in layers in a verrine or a small bowl.
  4. Drizzle maple syrup over the mixture.
  5. Garnish with grated coconut and serve.

This simple fruit salsa and yogurt recipe will add a unique touch to your mornings and transform your perfect breakfast or snack into a true gourmet pleasure!

Quick tip: If you add berries, incorporate them only at the last minute so they don’t get squished. You can also choose your own sweetener: a little honey, maple syrup, or coconut sugar that dissolves quickly and gives a light sweetness all work great. You can also choose to add a little extra kick with lime zest, lemon juice, or chopped fresh mint leaves.
