Feed Your Body Friday: Stuffed Avocado Shrimp Salad

Are you sick of avocado toast yet? No? Well, neither are we, but today I’ve come up with an alternative avocado dish to satisfy your avo-craving, minus the carbs.

Stuffed avocado shrimp salad is easily one of the best salads that I have ever come across. We have all had avocado salad a number of times, but the shrimp in this salad makes all the difference. The cooked shrimp completely changes the texture of this salad.

To make the salad more vibrant in taste, I’ve added in a whole clove of garlic (feel free to add more if you’re a garlic-lover). I also added in some yogurt to make the dish extra creamy and soft. Instead of yogurt, though, you can go for straight cream as well. But yogurt is always a better option when you are opting for the healthiest possible choices.

Finally, comes our star of the dish - shrimp. Add the cooked shrimp to the salad and mix everything well. Take time and stir the salad properly because a better mix will give you the best taste. Really let the flavours mingle! Don’t forget about salt and pepper, add it according to your preference.

The avocados for this salad should be ripe, as raw ones will not allow for the ideal soft texture we want. At the very beginning, what you need to do is take your avocados and cut them into halves. Gradually remove the flesh using a spoon so that nothing remains on the peel. Keep the peel aside for later. Then, cut the avocado flesh in cubes and add lemon juice to it. The lemon juice is a very good source of Vitamin C and beyond that, it elevates the taste instantly.

Servings: 4

Ingredients:

  • 4 large, ripe avocados
  • 1/2 cup cherry tomatoes
  • 1/2 cup corn
  • 2 green onions, sliced
  • 3/4 cup shrimp, cooked
  • 2 tbsp. yogurt
  • 1/2 lemon
  • 1 clove garlic, chopped
  • salt and pepper

Preparation:

  1. Cut the avocados in half lengthwise. Remove the flesh with a spoon and reserve the peel shells for presentation.
  2. Cut the avocado flesh in small cubes and add the lemon juice
  3. Add the garlic, yogurt, tomato, corn, and green onion. Add salt and pepper to taste. Mix well.
  4. Add shrimp and mix.
  5. Serve in avocado shells and enjoy!

This stuffed avocado shrimp salad is a very easy and quick recipe that you can make any time. It is healthy and delicious as well. If you are someone who is health-conscious, then this salad is a great option for you to bring to work for lunch or even for a light dinner. Moreover, it does not require a ton of ingredients to prepare it. All you need to have on hand is a handful of veggies and shrimp and your avocado salad will be ready in a few minutes.
