Today, it’s Dad’s turn to choose the menu - so why not offer him some options?

To help you prepare your Father’s Day meal, we have concocted 3 healthy versions of classic barbecue dishes. With all these ideas, you will surely please the whole family, not just dad! What father wouldn’t be touched by a delicious barbecue feast prepared just for him with his health in mind?

Did you know that it was in the beginning of the 20th century that Father’s Day was created by a young American woman named Sonora Smart-Dodd? She suggested emphasizing paternity as well as motherhood to pay homage to her father, who raised her alone. In 1924, United States President Calvin Coolidge agreed with the idea of a special day of the year to celebrate fathers, but it wasn’t until 1966 that Father’s Day became official under the presidency of Lyndon B. Johnson. Since then, Father’s Day in America is always the 3rd Sunday in June.

1. Barbecue Lime Shrimp

A simple recipe for barbecued shrimp in foil to serve as an appetizer or main course, accompanied with rice.

Preparation Time: 15 minutes

Wait Time: 1 hour

Cook Time: 12 minutes

Servings: 6

Ingredients:

Marinade:

  • 3 tbsp. olive oil
  • 1/3 cup lime juice
  • 1/4 cup orange juice
  • 2 tbsp. soy sauce
  • 2 tbsp. honey
  • 2 garlic cloves, minced
  • 2 tsp. grated peeled fresh ginger
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper

Shrimp:

  • 2 lb. medium shrimp
  • 2 bell peppers, red and yellow
  • 1 onion
  • 1 zucchini

Preparation:

  1. Preheat the barbecue over medium heat.
  2. In a bowl, place all the of the marinade and mix well.
  3. Add shrimp to the marinade and reserve in the fridge for 1 hour
  4. Cut 6 squares of 12-inch aluminum foil, then place veggies and shrimp on top. Close the foil to create twists.
  5. Cook until shrimp flesh is opaque (about 10-12 minutes). Open carefully.
  6. Serve on top of rice and enjoy!

2. Grilled Maple Syrup Salmon

It’s a really easy and good way to prepare salmon, everything cooked with maple syrup is good!

Preparation Time: 15 minutes

Wait Time: 3 hours

Cook Time: 10 minutes

Servings: 2

Ingredients:

Marinade:

  • 1/4 cup maple syrup
  • 2 tbsp. soy sauce
  • 1 tsp. old-style Dijon mustard
  • 1 tsp. fresh ginger. chopped
  • 2 tbsp. green onions, chopped
  • 1 tbsp. lemon or orange juice

Fish:

  • 2 fresh salmon fillets, 1/2 lb. each

Preparation:

  1. In a bowl, mix the ingredients to make the marinade.
  2. Add the salmon and marinate for 3 to 4 hours.
  3. Cook on the barbecue on high for about 5 minutes on each side (adjust depending on the thickness of the fillets).
  4. Serve with rice and stem kale or other veggies of your choice.

3. Sesame & Orange Tofu or Chicken Skewers

Combine sesame and orange in a marinade to add flavor to your tofu or chicken cubes.

Preparation Time: 15 minutes

Wait Time: 1 hour to 8 hours

Cook Time: Tofu - 12 minutes; chicken - 18 minutes

Servings: 4 skewers

Ingredients:

  • 1 block of 320g tofu, cut into 8 to 12 cubes, or 2 chicken breasts
  • 2 onions, sliced in cubes
  • 2 bell peppers
  • 4 bamboo sticks


Marinade:

  • 1/4 cup tamari
  • 1/3 cup orange juice
  • 1 tsp. grilled sesame oil
  • 1 garlic clove, crushed
  • 1 tsp. sriracha sauce
  • 1/4 cup honey
  • A piece of fresh ginger, grated


Preparation:

  1. In a bowl, mix the marinade ingredients
  2. Place the Tofu or Chicken with the veggies on bamboo sticks
  3. Let the skewers of tofu or chicken macerate in the marinate for 1 hour to 8 hours
  4. Preheat the barbecue on high heat.
  5. Oil the grill with canola oil. Place skewers and cook until the tofu is grilled and the chicken is completely cooked.
  6. Serve the skewers with rice and grilled asparagus or other veggies of your choice.
