Sometimes, we don’t have the appetite for a big meal, much less the energy to prepare anything. Yet, we can’t go to bed on an empty stomach. Unique, healthy, and satisfying recipes that cook quickly and require minimal effort can be difficult to find.

That’s where this tasty, warm bowl of vegetable noodle soup comes in. I often whip up this quick soup recipe for some comfort after returning home exhausted.

Cooking this hearty vegetable and noodle soup is very simple. Plus, the excellent thing about preparing soups for lazy cooks is that you can prepare about 6-8 servings in one go. Just a few minutes of vegetable chopping can have you prepared for 1 or 2 meals for the entire family, or to feed yourself for a few days.

This soup is incredibly flavorful since the vegetables, pasta, and herbs are cooked in vegetable broth rather than plain water. The goodness of 7 different vegetables adds more delicious flavors, natural colors, and fragrance. Onions contain antibacterial properties and are a superb antioxidant. Carrots are very good for the eyes. Both turnips and sweet potato are full of fibre, vitamins, and various minerals. Tomatoes maintain good heart health and are a great antioxidant. Finally, The low-calorie green lentils and peas are superb sources of protein.

Cook Time: 15 minutes

Total Time: 25 minutes

Servings: 6 to 8

Ingredients:

  • 8 cups vegetable broth
  • 1 onion
  • 3 carrots, peeled and cut into small pieces
  • 2 cups turnip, peeled and cut into small pieces
  • 2 cups sweet potato, peeled and cut into small pieces
  • 2 cups tomato (or a 540ml box)
  • 540 ml (or 1 can) rinsed green lentils
  • 1 cup peas
  • 2 cups cooked small pasta shell
  • 1 tsp. dried thyme
  • 1 tsp. garlic powder
  • 1 tsp. dried marjoram
  • 1 tsp dried oregano
  • Pepper, to taste

Preparation:

  1. In a large saucepan, bring the beef broth to a boil. Add the vegetables and seasonings. Cook over medium-high heat for 10 minutes.
  2. If the pasta is not yet cooked, add it into the pan after 5 minutes of cooking.
  3. Add tomatoes, lentils, and pasta. Simmer for another 5 minutes.
  4. Serve!

If you like, you may substitute any of the vegetables in this recipe with the available seasonal veggies in your region. For some freshness, you can garnish this noodle and vegetable soup with some parsley or mint leaves.
