As the winter season sneaks in, I like to incorporate an abundance of warm comfort dishes into my daily diet. A great way to do this is opting for various types of nutritious soups, like today’s recipe for Cream of Broccoli Soup!
To keep the tastebuds delighted during the cold weather, I like to create unique flavourful soup recipes with herbs, spices, and veggies, like this cream of broccoli soup. This soup recipe offers tender comfort while giving you the nutrients you need to protect yourself from seasonal colds and flu. - 1 cup water
- 1 cup broccoli with stems and florets
- 2 potatoes cut into pieces
- 2 tbsp. butter
- 1 onion, chopped
- 1 garlic clove, finely chopped
- 2 cups chicken broth
- 1 tsp. celery salt
- 1 tsp. oregano
- 1 tsp. parsley
- 1/2 tsp. paprika
- 1/2 cup cream
- Salt & pepper
- In a saucepan, bring the water to a boil. Add broccoli and potatoes. Reduce heat and simmer for 10 minutes.
- Melt butter in another saucepan and sauté onions and garlic for 1 minute over medium heat. Add broccoli and potatoes along with water and chicken broth.
- In a blender, blend the soup until smooth and even.
- Transfer to the saucepan. Then, add celery, salt, spices, and salt and pepper.
- Add cream, mix well, and serve.
For those who prefer broccoli chunks in their soup, you can use a potato masher instead of a blender/hand mixer.
