Feed Your Body Friday: Caprese Avocado Toast

Avocado toast is one of the hottest food trends of the today that I certainly had not really seen coming! Now, countless trendy cafes and restaurants have their version of this nutritious dish on the menu.

I have a bit of an obsession with avocado, I could eat it every day of the week! The secret to a perfect avocado? The fridge, no more complicated than that. Basically, avocados require a lot of supervision before they are ready. But, once they’re ripened to your taste, you can put them in the fridge and they will keep for at least a good week without a problem!

Making avocado toast is just about as simple as it gets: all you need is a slice of toasted bread with a mashed or sliced avocado on top. It’s impossible to be easier! Because we are often on the go, this recipe is convenient for even your busiest days. You can even bring the ingredients for lunch and assemble everything at school or at the office. When you have a little more time in the morning, they are perfect for a gourmet and balanced breakfast.

So, before you dismiss avocado toast as a millennial foodie trend, take just 15 minutes and give this recipe a taste. You’ll be glad you did.

Preparation time: 15 minutes

Servings: 4

Ingredients:

  • 4 baguette slices
  • 1 avocado, ripe
  • 6 cherry tomatoes
  • Basil leaves, to taste
  • 3 tbsp. balsamic glaze
  • Salt and pepper, to taste

Preparation:

  • Lightly toast the slices of baguette. Reserve.
  • Slice the avocado and the tomatoes.
  • Chop up basil leaves.
  • Spread the avocado slices on each piece of toast, divide the tomatoes, and sprinkle the chopped basil.
  • Drizzle with balsamic glaze and shake on a little salt and pepper to taste.

Like all of my favourite recipes, there is a multitude of flavour combinations you can play with for dishes like this. Just because it’s simple doesn’t mean you can’t get inspired by the seasons and vary the ingredients to surprise yourself with something new every time.

An avocado a day keeps the doctor away forever! At least, I think so. Avocados are filled with antioxidants, vitamin C, and vitamin E, a powerful nutrient cocktail for your body and for your skin. The high level of monounsaturated fatty acids can even help lower cholesterol.

My whole family immediately became addicted to this dish. I think you will too if you love avocado! You’ll also love not having to turn on your oven or stand over a hot stove on those particularly scorching days. Summer is about getting outside and making the most of nature - get out of the kitchen and leave the complicated recipes for colder days.
